Market Scouts Week 2

This week at Market Scouts was “Hue as a Ripeness Clue.” Using bell peppers as our visual and taste example, we examined how some foods change color as they ripen. A few questions we pondered: Why do they become red as they ripen? Why do they get sweeter? Can we think of other foods that change color over time? What foods stay green?

By the end of the day we had a beautiful collage of color-changing foods and those that stay green. It was awesome to hear kids asking farmers questions such as, “Does this carrot start out orange? Or did it change color underground?”
